Philosophy:
1/2 c. raw almonds, 3 egg yolks, 3 tbsp. sugar, 1 c. heavy whipping cream. place almonds in single layer on ungreased baking sheet. bake 12 min. at 350°f. while baking, turn almonds over every 4 min. so both sides are lightly toasted. process almonds to fine consistency in food processor. whisk eggs and sugar together until creamy. fold in cream, then almonds. serve with fresh fruit and granola.
