2 c. cake flour, 1 tsp. baking powder, 1/4 tsp. baking soda, 1/4 tsp. salt, 2 eggs, 1/4 c. sugar, 1/4 c. melted unsalted butter, 1 c. milk, 1/2 c. buttermilk, non-stick cooking spray, for coating waffle iron. in large bowl, stir together the dry ingredients. make a well in the center and add the buttermilk, milk, eggs, and melted butter. mix together just until combined- don't overmix. batter should look slightly lumpy. spray the heated waffle iron with nonstick cooking spray. pour 1/2 cup of batter onto heated waffle iron. close and cook as directed by the manufacturer. serve immediately.
